Peanut Butter Cupcakes

A few weeks ago I went to an adorable cupcake boutique in Oklahoma City called Pinkitzel. They had these wonderful chocolate cupcakes with peanut butter icing. I knew that with a little "googling" I would be able to find a similar icing recipe and just as I thought - I did.


I think they tasted wonderful but you can try them yourself:
Confession: I cheated and just made a box chocolate cake for the actual cupcakes.
Frosting: 
1 cup powdered sugar
3/4 cup creamy peanut butter
1/4 cup (1/2 stick) unsalted butter; room temperature
1/4 teaspoon vanilla
4 teaspoons whipping cream (optional)


So go and make them for your valentine ;)
